Corn Flake Cookies

How’s that sweet tooth? Craving something crunchy, but gooey?

Well, I have the perfect cookie for you.

I feature this cookie in my very first book, X-Treme Confusion. In the story, I write about this cookie being Laney’s favorite and how she begs Lilly to make them. I know what you’re thinking. Why doesn’t Laney make them herself? Well, the poor dear can’t cook to save her life. She actually set the stove on fire while trying to boil water.
I shit you not. 😀

Before I start this recipe, I first must warn you. My grandmother Helen taught me to cook. Why am I telling you this? Why is it a big deal? Well, it means I tend to not to measure the ingredients. A pinch here. A scoop there. Yup, that looks like the right amount.

Despite my teaching, I will try to give you the best measurements that I can.

So, here we go….

This is what your will need.
Corn flakes, your favorite peanut butter, corn syrup, sugar, two bowls, a measuring cup and two spoons.


1 cup of sugar
1 cup of syrup
1 cup of peanut butter. -Now, sometimes I don’t measure the peanut butter. Well, that’s a lie. I NEVER measure it. I just dig out what looks like to be a cup and use it.
5 cups of corn flakes. -Original recipe had called for 7, but we like our cookies extra gooey. So when you make these, just fool around with the amount until you have the cookie that’s perfect for you.


How I do it.

I put one cup of sugar and one cup of syrup in a microwavable bowl and mix. Then I set my microwave to 3 minutes, but watch it carefully for it to boil. You don’t want it boil to long. If you do, your cookies will turn out hard. Like you could use them for batting practice hard.

The majority of recipes I’ve seen for these cookies, the sugar and syrup is heated on a stove, but to each their own. If you do the stove, cook until boiling and remove from heat.

While the sugar and syrup is cooking, measure your corn flakes and put them in a large bowl.

Set aside.

When your sugar and syrup have reached their boiling point, remove and then add your peanut butter.

Once the mixture is nice and creamy, pour over the corn flakes, and mix. When they are thoroughly mixed, drop spoonful of the mix onto wax paper. I have seen people take this mixture and spread it onto a cookie spread and cut them into squares when they have set, but we prefer spoonfuls.

Tada!!! They are done.
Now is the hard part- the wait. Ugh! You’re suppose to wait roughly 20-30 minutes for them to cool down and ‘set’. I’m here to tell you, that doesn’t happen in the Johns’ home. LOL! Like I said, we really love these.
